The academic aspects of food chain protection

Abstract

Both the heightened security situation of the last decades and the current wars are bringing the issue of food chain security to the fore. Until the end of the last century, the focus was on traditionally vulnerable elements of the food chain - slaughterhouses, animal medicines, residues of sprays, minimising the chances of microbiological contamination.  However, the increasing frequency of food scandals has shown that it is no longer enough to approach the problem in this way, but that food chain safety needs to be approached and managed with much more care and with maximum identification of risk factors.To prevent and address problems, attention must now be given to all elements of the food chain. The food safety events of the last few decades and the new safety challenges of the 21st century have justified the development of additional safety strategies, beyond the traditional food chain surveillance tools, including the assessment of risk factors, the training of professionals and the development of prevention and response strategies.
